The Japan Association for Cellular Agriculture (JACA), with the support of the Foodtech Public-Private Council, is pleased to announce the following two events:

Japan Cell-Ag-READY Dialogue 2026 (October 9, 2026)


Around the world, countries are building the frameworks for cultivated food which is needed to move to the next phase — establishing a track record of commercial production — through rule-making that keeps pace with technological innovation and through industry-academia collaboration. Some cultivated foods have already been approved for sale or have undergone safety assessments in the United States, Australia and New Zealand, Singapore, and Israel. South Korea, the United Kingdom, Europe, and Thailand are clarifying regulatory jurisdiction and procedures and conducting pre-market reviews; Switzerland and Indonesia are working to attract companies to their markets; and China is advancing demonstration research toward mass production.
In Japan as well, the early development of high-quality guidelines is called for — so that innovation can be encouraged while maintaining rigorous safety standards, and so that public trust can be fostered through clear guidance and transparent communication. Moreover, with a view to the growth of Japan’s technology industries, it is essential to engage proactively in rule-making on emerging technological trends, in order to translate the benefits of these technologies into national interest while avoiding undesirable social consequences.
Through these events, we aim to share the latest domestic and international developments in the cultivated food sector and to exchange views with a broad range of stakeholders on key issues relating to food safety, intellectual property, and industrial collaboration — and, on that basis, to explore how rules for these technologies should be shaped. In addition, in collaboration with the Hokkaido Bureau of Economy, Trade and Industry (METI), we will hold sessions exploring the potential for collaboration with the precision fermentation field and with Hokkaido’s agriculture and food industries, providing a forum for dialogue with practitioners and researchers in the region.

Founder and Inventor of JuJuJuu. He previously worked in the Intellectual Property Division of Procter & Gamble, where he was responsible for IP strategy, external relations, and negotiations across Asia. In 2021, he invented a screwless extrusion technology for rapidly structuring cell-based foods and alternative proteins, which was granted a U.S. patent in 2025. Josh Ravenhill is Head of the Cell-Cultivated Product Sandbox Programme at the UK Food Standards Agency. He is leading the UK’s regulation into cultivated meat, working with industry and academia to:
• Identify the hazards and data companies should include in applications to demonstrate their mitigation;
• Explain how food legislation applies to this new technology; and,
• Communicate regulatory requirements to companies, so they know how to produce safe food and gain confidence in the UK market.
Josh is interested in how regulation and providing clarity about regulatory requirements can be used to protect consumer safety whilst also enabling innovation. He is also interested in how the UK’s expertise in regulation of innovative foods can be shared to influence international standards and help create export pathways.

Dr. Yooheon Park is a Professor in the Department of Food Science and Biotechnology at Dongguk University, South Korea, where he leads the Foodtech Innovation in Safety & Technology (FIST) research group.
He plays a leading role in the Society for Food Sustainatech (SFS), helping to shape its agenda and direction on the future of food regulation.
His research centers on regulatory science for cultivated meat and novel foods, with emphasis on the safety assessment of cell lines, culture-media ingredients, and final products, alongside international regulatory harmonization and intellectual property in emerging food industries.
He works closely with the Ministry of Food and Drug Safety (MFDS) to develop national regulatory frameworks for alternative proteins, and his scholarship bridging Buddhist ethics and IP policy with food technology has appeared in journals including Nature Food and Nature Biotechnology.
Dr. Park engages extensively in international research and regulatory collaboration across Europe, North America, and Asia, and contributes to expert panels and international symposia on food safety, regulatory convergence, and scientific risk evaluation.
In February 2026 he was elected Vice-Chairperson of the Codex Committee on Processed Fruits and Vegetables (CCPFV), and he serves as an Expert Committee Member of the Presidential Advisory Council on Science and Technology (PACST).
In recognition of his contributions to international food standardization and to establishing the regulatory framework for novel foods including cultivated meat, he received the Geunjeong Order of Service Merit from the Government of the Republic of Korea in 2026.

パク・ユホン(Yooheon Park)博士は、韓国・東国大学 食品バイオ融合工学科の教授であり、同大学の食品安全・技術イノベーション研究グループ(Foodtech Innovation in Safety & Technology:FIST)を率いています。また、Society for Food Sustainatech(SFS)において中心的な役割を担い、食品規制の将来をめぐる同学会のアジェンダと方向性の形成に貢献しています。
同博士の研究は、培養肉および新規食品(ノベルフード)に関する規制科学を中心とし、細胞株・培養培地成分・最終製品の安全性評価に重点を置くとともに、新興食品産業における国際的な規制調和および知的財産の問題にも取り組んでいます。韓国食品医薬品安全処(MFDS)と緊密に連携し、代替タンパク質に関する国家規制枠組みの構築を進めており、仏教倫理および知的財産政策と食品技術を架橋するその研究成果は、Nature Food や Nature Biotechnology をはじめとする学術誌に掲載されています。
パク博士は、欧州・北米・アジアにわたる国際的な研究および規制協力に幅広く携わり、食品安全、規制の収れん(コンバージェンス)、科学的リスク評価に関する専門家パネルや国際シンポジウムにも寄与しています。2026年2月には、コーデックス 加工果実・野菜部会(CCPFV)の副議長に選出され、また大統領直属 国家科学技術諮問会議(PACST)の専門委員も務めています。
国際的な食品規格化への貢献、および培養肉を含む新規食品の規制枠組みの確立への功績が認められ、2026年に大韓民国政府より勤政勲章(韓国政府の褒章制度の一つ)を受章しました。

Ashley now seats as Principal consultant and Co-Founder of BYSEE-SRA. She has worked in the food industry as a regulatory expert. Ashley served as the Director for Regulatory and Scientific Affairs for China and the APAC region for ADM, Tate & Lyle and Ingredion.
Regulatory Committee Member of China food additive and ingredient association, Regulatory committee member of China food industry association. She also served as Food and Beverage Committee Chair of EU China Chamber of Commerce, and Co-Chair for American Chamber of Commerce for quite a few years.
In her previous corporate roles, Ashley was responsible for the directing staff to support the introduction of new ingredients and products in China, Japan, S. Korea, Singapore, Thailand, Indonesia and other markets in Asia Pacific. Ashley has extensive experience in the launch of sweeteners, such as stevia and allulose, dietary fiber such as polydextrose and resistant dextrin, novel health and wellness ingredients and has extensive experience in labeling and product claims. She is fluent in English and enjoys working with US and European based companies looking to move new products into Asia.

Josh Ravenhill is Head of the Cell-Cultivated Product Sandbox Programme at the UK Food Standards Agency. He is leading the UK’s regulation into cultivated meat, working with industry and academia to:
• Identify the hazards and data companies should include in applications to demonstrate their mitigation;
• Explain how food legislation applies to this new technology; and,
• Communicate regulatory requirements to companies, so they know how to produce safe food and gain confidence in the UK market.
Josh is interested in how regulation and providing clarity about regulatory requirements can be used to protect consumer safety whilst also enabling innovation. He is also interested in how the UK’s expertise in regulation of innovative foods can be shared to influence international standards and help create export pathways.

Dr Hannah Lester has more than 18 years of experience in global regulatory affairs, having successfully managed over 150 regulatory applications across animal feed, novel foods and biotechnology-derived products. AMPS InnovatioSuzannah (Suzi) Gerber, PhD, is Executive Director of the Association for Meat, Poultry, and Seafood Innovation (AMPS), the unified voice of the North American cultivated food industry, where she leads industry strategy, policy engagement, and public trust initiatives on behalf of the sector.
As a translational food, nutrition, and behavior scientist and former executive chef, she bridges bench science, clinical research, and real-world commercialization through her faculty research appointments at Tufts University, George Mason University, and the Geisel School of Medicine at Dartmouth.
At Tufts, she directs the Food and Society Innovation Initiative at the Auster Center for Applied Research and Innovation in the School of Engineering and is a consumer behavior researcher at the Tufts University Center for Cellular Agriculture (TUCCA), where she is also Director of the Culinary and Sensory Core of the Food Innovation Hub.
Her research focuses on consumer acceptance and the biobehavioral, sociocultural, and sensory drivers of adoption for novel foods.
She is a widely quoted voice in U.S. media on nutrition, the food industry, and cultivated food policy.

After graduating from the Department of Agricultural Chemistry in the Faculty of Agriculture, where I studied animal molecular biology, I joined Kyokuyo Co., Ltd., inspired by his part-time job experience as a student.
I began my career in manufacturing at one of the company’s factories, followed by sales to mass retailers in the Kanto region and procurement, product planning, and development at the head office. then gained experience as an expatriate employee and in factory operations in Thailand. After returning to Japan, I was involved in the distribution, processing, and sales of farmed fish.
I currently belongs to the Resource Development Department, a division responsible for new business development, where I handles new business projects, primarily involving farmed fish.
Since its establishment in 1937, Kyokuyo Co., Ltd. has sourced seafood from around the world and engaged in import development, processing, and sales. In recent years, the company has faced unprecedented increases in fish prices due to declining catches caused by climate change, as well as intensified sourcing by overseas competitors and growing consumption driven by rising health consciousness. Nevertheless, Kyokuyo will overcome these turbulent times with its characteristic pioneering spirit.

Kazuko Ogasahara holds a Ph.D. in Organic Chemistry and a Master’s in Public Relations. With a career spanning research and business development, she has led initiatives from amino acid science to product innovation. Her expertise in nutrition and science communication has shaped corporate messaging at Ajinomoto. From 2021 to 2024, she served as a Senior Natural Resources and Agriculture Specialist at the Asian Development Bank, where she established an intersectoral nutrition working group, developed nutrition commitments for strategic initiatives, supported global advocacy efforts, and contributed to technical assistance in Indonesia. She now leads the Global Communications Department at Ajinomoto and contributes to advancing sustainability through strategic messaging and stakeholder engagement.
